An easy Monday night dinner was in order. Nice looking whole chicken breasts on the bone at the supermarket, so I bought 2 and roasted both, some for dinner tonight and some to go into chilaquiles tomorrow night.
Chicken with baby bok choi braised with hoisin, ginger, garlic and onion. The rice was done in the rice maker, using the steam setting to saute some garlic lemon zest and ginger, and saute the rice a bit before adding vegetable stock. Easy to do, doesnt dirty any extra pots, and adds quite a bit of flavour!
I was cleaning up the fridge a bit, and noticed there were some apples that needed to be used up, and some cream cheese, so I thought an apple cake was in order. This recipe gets baked in an 8″ springform pan, so has a bit of height, and great tender texture. The batter is quite stiff when done, but can all be done with a hand mixer. Light cream cheese + sugar + small amount of butter whizzed up until creamy, add 2 eggs and beat well. Fold in dry ingredients, then fold in apple chunks and sprinkle with cinnamon sugar. Because of the cream cheese , it has a rich texture and takes a while to bake, but because of the light cream cheese, it has <30% calories from fat.
Kimiko update — she seems to be limping a bit less on the hind leg that has the stretched ligament, however, her period of reduced activity continues. … which means, there are times Eric goes out without her! When he does, she keeps constant watch at the living room window — stationed on the daybed, with chin resting on the window sill!
