An easy Monday night dinner was in order. Nice looking whole chicken breasts on the bone at the supermarket, so I bought 2 and roasted both, some for dinner tonight and some to go into chilaquiles tomorrow night. We are lucky to have a number of independent grocery chains here, so have lots of competition among supermarkets.
