A quick post here from chez Real Food Made Easy. Ive been baking quite a bit lately — testing gluten-free recipes and all, but haven’t been taking the time to document, so here’s a quickie for you :0 !
I like my muffins “muffiny” – a bit dense and craggy, none of these fluffy concoctions (dammit it, if I want a cupcake, I’ll eat a cupcake) you see masquerading as muffins! The base of these is millet, with a bit of tang from buttermilk. They have some chocolate chips tossed in to make them a little bit treat-like, BUT a bit of almond meal and flax seed to make you not feel so guilty!
Here’s the final list of ingredients:
- 3/4 cup millet
- 3/4 cup potato starch
- 3/4 cup tapioca starch
- 1/2 cup sugar
- 2 Tablespoons golden flaxseed meal
- 2 Tablespoons almond flour
- 1 Tablespoon baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon xantham gum
- 1 teaspoon salt
- 2 large eggs
- 3/4 cup buttermilk
- 1 teaspoon vanilla extract
- 3/4 cup chocolate chips
These would also be good with blueberries and lemon, or cranberry and orange.
