Gluten-free Quinoa brownies … Maker approved!

This weekend, I was out at the first ever Vancouver Island Mini Maker Faire — part expo, part gathering of like-minded makers, and part hands-on making time.  The event was produced and executed by Victoria Makerspace (the go-to place for makers needing woodworking equipment, laser cutters, 3-d printers, or metal-working equipment …).

I was helping run the concession to keep the hungry Makers supplied in coffee and snacks, and made up several dozen pistachio-lime-rosewater cookies, and THESE gluten-free brownies which went down a treat with Makers of all ages and dietary ilks.  I guarantee you these ARE so delicious you will never miss the gluten and dairy!

Yield: 12-15 brownies

Gluten-free Quinoa brownies … Maker approved!

Ingredients

  • 3/4 cup sorghum flour
  • 1 cup quinoa flakes
  • 3/4 cup light buckwheat flour
  • 1/2 cup tapioca starch
  • 1/3 cup cocoa powder
  • 1 tsp xantham gum
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp sea salt
  • 1 1/2 cup granulated sugar
  • 2/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/2 cup hot coffee (or slightly more as required to make a stiff batter)
  • 3/4 cup dairy-free chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Line a 9x13 baking pan with a parchment sling, and lightly grease the sides.
  2. Combine all the dry ingredients in a large bowl, and whisk well to combine.
  3. Form a well and add the wet ingredients, (eggs first, whisking well to combine). Mix well with a spatula, and then fold in the chocolate chips.
  4. Bake at 350 degrees for 25-30 minutes, until just set. Let cool before slicing

Notes

This recipe easily halves or doubles. If you bake a 1/2 batch, bake in an 8" square pan. If you double the recipe, and are baking 2 pans, make sure you rotate the pans half-way through.

Bake this in the heaviest pan you have -- or place your baking pan on a baking sheet to help moderate the temperature and allow the brownies to cook more evenly.
